INGREDIENTS :
1. For the BASE :
● 1 cup wheat flour
● 1 cup maida / all-purpose flour
● 1/2 teaspoon salt
● 2 tablespoon oil
● Water (for kneading)
2. For the FILLING :
● 2 tablespoon oil
● 2 cloves of garlic (finely chopped)
● 1-inch ginger (finely chopped)
● 1 chilli (finely chopped)
● 3 tablespoon tomato sauce
● 2 potato/aloo (boiled & mashed)
● 1 cup paneer/cottage cheese (grated)
● 1/2 teaspoon salt
● 2 tablespoon coriander (finely chopped)
● Oil (for frying)
3. For the CHILLI VINEGAR :
● 1/2 cup vinegar
● 2 chillis (finely chopped)
4. For the FRANKIE MASALA :
● 1 tablespoon chilli powder
● 1/2 teaspoon turmeric powder
● 1 teaspoon cumin powder
● 1 teaspoon coriander powder
● 1/2 teaspoon garam masala
● 1 teaspoon chaat masala
● 1 teaspoon amchur
● 1/4 teaspoon pepper powder
● 1/2 teaspoon salt
5. For the FRANKIE :
● Green chutney
● Onion (finely chopped)
● Tomato sauce
● Cheese (grated)
INSTRUCTIONS :
Base Preparation:
1. In a large bowl add wheat flour, maida, salt and oil.
2. Mix well, making sure everything is combined.
3. Add water as required and knead the dough till it is smooth and soft.
4. Cover the dough and allow it to rest for 20 minutes.
5. Knead once again and make a medium-sized ball for your roti.
6. Dust with wheat flour and roll uniformly.
7. Place it onto a hot tawa greased with oil.
8. Cook for a minute and flip over.
9. Grease with oil and cook both sides of the roti. Your Roti is ready!
Chilli Vinegar Preparation:
1. In a small bowl add vinegar and chilli.
2. Mix well and allow the chilli vinegar to rest for 10 minutes.
Frankie Masala Preparation:
1. In a small bowl take chilli powder, turmeric, cumin powder, coriander powder and garam masala.
2. Add in chaat masala, amchur, pepper powder and salt.
3. Mix well to combine all the spices. Frankie masala is ready!
Filling Preparation:
1. In a large kadai, heat oil and saute garlic, ginger and chilli.
2. Add tomato sauce and saute for a minute.
3. Add in your prepared frankie masala and cook for about a minute.
4. Now add the potatoes, paneer and salt.
5. Mix well, making sure everything is well combined.
6. Further, add coriander and mix well. The aloo mixture is ready.
7. Now, grease a pan with oil and prepare a pattice using the mixture.
8. Roast on medium flame until it turns golden brown.
Assembling Your Frankie :
1. First, take the roti and spread green chutney on it. The amount is as per your liking.
2. Place the pattice on the roti.
3. Top with finely chopped onions, chilli vinegar and prepared frankie masala.
4. Add some tomato sauce and grated cheese.
5. Roll tightly and cover with butter paper or foil.
