INGREDIENTS :
4 medium-sized tomatoes
1 medium-sized green capsicum
1/2 cup green peas
1 cabbage (approximately weighing 100 grams)
4 medium-sized potatoes
4 tablespoon vegetable oil
1 teaspoon cumin seeds
2 medium-sized onions
3 teaspoon red chilli powder
1 teaspoon turmeric powder
Badshah Pav Bhaji Masala

INSTRUCTIONS :
Boil all the vegetables (tomatoes, capsicum, green peas, cabbage and potatoes); peel and mash the potatoes after boiling.
Heat the oil in a metal bowl/pan on a medium flame. Add the cumin seeds and chopped onions.
Allow this to cook till the onions are brown and caramelized, but not burnt!
Add the red chilli powder and turmeric powder. Stir for 2 minutes.
Coarsely grind all the vegetables that you had boiled (EXCEPT the potatoes) using a grinder or food processor and add it to the bowl/pan; stir this well for 5 minutes.
Add the mashed potatoes and blend them in well using a large spoon or a ladle.
Add water as required, if the mixture appears to be too thick.
Add salt to taste and 3 tablespoons of Badshah Pav Bhaji Masala. Simmer the mixture for 4 to 5 minutes.
You may apply butter to your pavs and slightly toast them on a hot pan.
Garnish the final pav bhaji with some coriander leaves, grated cheese, some fresh onions, a squeeze of lemon and some butter (garnish as per your liking), and enjoy your meal!
